(Boo-dah jee-gay) Korean Army Stew
Ingredients
Ingredients for the Sauce:
3 Tbs ground pepper flakes
1.5 Tbs soy sauce
1 Tbs fish sauce
1 Tbs rice wine vinegar
1/2 Tbs sugar
1/2 tsp salt
1/4 tsp black pepper
1/8 cup water (only needed if adding red pepper directly to sauce)
1 Tbs chopped garlic (approximately 8 to 10 cloves garlic)
Ingredients for the Stew:
1 cup kimchi
6 oz spam (half can), cubed
6 oz hotdogs (2 links), sliced into 1/4-inch thin
5 oz breakfast sausage or any ground meat
3 to 5 green onions, sliced
2 Tbs baked beans, cooked pinto beans, or cooked chili beans
5 cups beef stock
4 oz instant ramen noodles or udon noodles
Instructions
1.) Mix sauce ingredients together EXCEPT FOR THE RED PEPPER FLAKES AND THE 1/8 CUP WATER. Add them at the end after checking the spice of the dish. Add as much or as little as needed at the end, or have people add to their own bowl. If you’re brave, mix into the sauce as well and add the water.
2.) Place Kimchi, Spam, hotdogs, green onions, and beans into the pot. Traditionally, Kimchi is placed in the center of pot and the other ingredients are placed around the edge of pot, keeping each ingredient in little groups. Disperse ground meat in small chunks (about grape size) throughout the pot. Additional ingredients may be added according to preference (i.e. mushrooms, vegetables, other meat, American cheese, etc.).
3.) Pour sauce mix into the center of the pot and add the beef stock. Bring the pot to a rolling boil. Let the pot boil for approximately 5 minutes. Stir sauce around.
4.) Add ramen noodles to pot after it has been boiling for a while, or cook noodles in a separate pot.
5.) Traditionally, the dish is served by placing the entire pot at the center of the table for everyone to share. Korean-food enthusiasts add noodles and the ingredients they like into their individual bowls (hence the reason keeping each ingredient grouped separately in the pot is important).
