Ingredients
2 Quarts Chicken Broth
1 Can Diced Tomatoes
1 Lbs Fresh Tortellini (Costco Brand)
1 Onion, Diced
2-3 Stems Celery, Diced
2 Carrots, Diced
2 Teaspoons Minced Garlic
3 Knorr Chicken Bouillon Cubes (Large Ones)
2 Teaspoons Italian Seasoning
2-3 Ounces Chopped Fresh Spinach (Basically, A Large Handful)
Instructions
In a large Dutch Oven, sauté the onion, celery, garlic, and carrots in some olive oil.
Add chicken broth, tomatoes, Italian seasoning, and bouillon cubes. Bring to a boil, and simmer until the vegetables are cooked well.
About 10 minutes before serving, add the fresh spinach and let it cook until tender.
About 5 minutes before serving, add the fresh tortellini. They only take a couple of minutes to cook. Don’t overcook.
Serve with grated Parmesan and croutons.
