Name:
Dad’s Black Bean Chili
Description
Chili
Ingredients
1.5 lbs of your choice of meat. (flank steak, or stew meat, (cubed) or birria*, or hamburger. (browned)
1/2 of a Sweet Onion (diced)
4 Green Onions (diced)
1/4 Cup Cilantro (diced)
2 Cans Diced or Crushed Tomatoes (drained)
3 Tablespoons Carne Asada Seasoning
1 Tablespoon Oregano
1 Tablespoon Diced Garlic
2 Tablespoons Red Wine Vinegar
1 Tablespoon Chili Powder
1 Teaspoon Taco Seasoning
6 Cans Black Beans (undrained)
1 Knorr Chicken Bouillon Cube (larger sized cube)
Add some diced Bell, Sweet, or Hot Peppers if desired.
Instructions
Place all the ingredients into a crock pot or bean pot, and cook on high for several hours, until the meat is cooked and very tender.
Depending on how thick you like your chili, you might want to emulsify or blend up some of the beans to thicken the chili. Or add some liquid if you like it runny.
Serve the chili with your choice of condiments. Corn chips, grated cheese, sour cream, cornbread, crackers, etc. Garnish it with diced Cilantro or Green Onion.
* If you use birria meat, you might want to use a little less quantity of the spices, since the birria is already seasoned. Season to taste.
