Salted Licorice Caramels

Description

Black, chewy, and delicious.

Ingredients
1 (14 ozs) Can Sweetened Condensed Milk
1 1/2 Corn Syrup
1 Cup Butter or Margarine
2 Cups Sugar
1/4 Teaspoon Salt
2 Teaspoons Anise Oil
1 Teaspoon Black Food Color Paste

Instructions
•Butter a 9 x 9 baking pan. Set aside.
•In a heavy 4 qt saucepan, combine condensed milk, corn syrup, butter, sugar and salt.
•Place over medium heat, stir with a wooden spoon until well mixed. If sugar crystals are present, wash down sides with a wet pastry brush.
•Clip on a candy thermometer. Cook and stir constantly until mixture reaches 242F (120C), or firm ball stage.
•Remove from heat and stir in flavoring and food coloring. Blend well.
•Without scraping, pour into the buttered 9x9 pan.
•Sprinkle hot caramel lightly with salt.
•Allow to stand at room temperature overnight.
•Cut into 1 inch squares and wrap in waxed paper or plastic wrap.
*For Red Licorice, you can use 2 tablespoons wild cherry oil and 1 teaspoon red food paste.*
