St. Paddy’s Day Cookies
Ingredients
1 Cup Butter - Softened
3/4 Cup Brown Sugar
1/4 Cup Granulated Sugar
1 Teaspoon Vanilla
1 Box Pistachio Pudding Mix (4 Serving)
2 Eggs
6 Drops Green Food Coloring
2 1/2 Cups Flour
1 Teaspoon Baking Soda
2 Cups Butterscotch Chips
1 Cup Finely Chopped Nuts (Optional)
Instructions
1. Cream Butter, Sugars, Vanilla and Pudding Mix.
2. Add Eggs and Food Coloring.
3. Mix in Flour and Baking Soda
4. Add in Butterscotch Chips and Nuts.
5. Chill for at least one hour.
6. Roll into 1.5” inch balls.
7. Place on an ungreased cookie sheet 2” apart.
8. Bake at 350 for 12 - 18 minutes. Depending on your oven.
