Spinach Puffs

“MY SPINACH PUFFS”
Ingredients
4 ounces cream cheese, softened
1 large egg
1 tablespoon olive oil
1/2 tsp dried dill
2 cups fresh spinach, chopped and packed
3/4 cups/1 small package crumbled feta
2 tsp bacon bits (I like to add more)
Salt and pepper to taste (the feta and bacon give it a ton of flavor already, but you can add if you want)
1 sheet thawed puff pastry
1 tablespoon melted butter
Instructions
Spray cups in a muffin pan with cooking spray
Microwave cream cheese until melty, but not steaming. Add oil, cream cheese, dill, and egg to a bowl and mix until well combined
Add chopped spinach, feta, and bacon and mix together with a fork.
Cut the pastry sheet into 9 squares and put into muffin cups, gently pushing into the bottom of the cup (you might have to stretch them out a little). Evenly divide the filling among the pastry squares. Bring the 4 pastry points together and press the tips together so the filling is covered. Lightly brush with melted butter.
Bake at 400 degrees for about 20 minutes until golden. Allow to cool for 10 minutes before popping them out.
