Mom’s Cornbread
Ingredients
1 1/4 cups biscuit mix like Bisquick or Krusteaz
1/2 cup cornmeal
1/2 cup sugar
1tablespoon baking powder
Add
1 cup milk
1/2 cup melted butter (1cube)
2 eggs, slightly beaten
Instructions
Preheat oven to 350.
In a large bowl, mix dry ingredients.
Add liquid ingredients and stir until just mixed.
Pour the batter into a greased 9 inch round or square baking pan.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Cool completely and cut into wedges or squares.
Serve immediately, or store in an airtight container for up to a week.
