Italian Spumoni Cookies

Ingredients
1 Cup Softened Butter
1 Cup Sugar
1 Egg
1 tsp Vanilla Extract
1 tsp Almond Extract
2 1/2 Cups Flour
1/2 tsp Baking Powder
1/2 tsp Salt
Green cookies: 1/3 cup chopped pistachios, 3 Tbsp Pistachio Pudding Mix, 2-3 drops Green Food Coloring.
Red Cookies: 1/3 cup chopped and drained, Maraschino Cherries, 2-3 drops Red Food Coloring.
Instructions
Cream butter, sugar, egg, vanilla and almond extracts.
Blend in flour, baking powder, and salt.
Divide the dough into thirds.
Add the red cookie ingredients to one third of dough, mixing by hand. Gloves?
Do the same with the green cookie ingredients.
Use the leftover third to make white cookies.
On lightly floured parchment paper, or wax paper, roll the dough into logs. About 1 1/2” thick and 16” long.
Flatten the logs into 3”- 4”x 16” rectangles.
Gently stack the rectangles on a single sheet of plastic wrap, starting with green, then white, then red.
Wrap the dough in plastic wrap, and refrigerate for at least 3 hours.
Cut the dough crosswise to make 1/4” thick, striped, rectangles.
Lay them 1 inch apart on a cookie sheet and bake at 350 for 9-11 minutes, or until the edges are lightly browned.
