Curried Bacon Yorkshire pudding
Description
Ingredients
For the pudding:
3 Eggs
3/4 cup of flour
3/4 cup of whole milk
3/4 tsp salt
About 1/4 cup of oil (olive oil, canola oil)
For the curried bacon:
6 strips of bacon, cooked
1 whole onion
1 tbs of butter
1 1/2 tsp garam masala
1 1/2 tsp curry
Some toppings like siracha, cilantro, parsley
Instructions
Preheat oven to 400°F
Chop up onion and bacon, and set aside
Put 1 tsp of oil into each cup of a 12 count muffin tin
Place the muffin tin in the oven for 5-7 minutes to heat the oil
Wisk the eggs, flour, salt and milk together to form a loose batter
After the oil is heated, fill each cup about halfway in the muffin tin with the batter
Cook the batter for 10-12 minutes in the oven
While the pudding is cooking, melt butter in a saucepan over stove
Add onion to saucepan and sautè
Add bacon to saucepan
Once the bacon is rendered, add garam masala and curry
Once pudding is cooked and cooled a bit, remove the puddings and drain any leftover oil from each pudding
Add the curried bacon filling
Top with siracha, cilantro or parsley if desired
