Description
A easy, quick version of Jambalaya
Ingredients
1 tbs of canola oil
2 lbs chicken breast
1 lbs andouille sausage
1 yellow onion
1 green bell pepper
1 cup of celery (2-3 stalks)
3 cloves of garlic
2-3 tbs of Creole Seasoning (check recipe to make this)
3 cups of chicken broth
2 cups of rice
1 can of diced tomatoes (not drained)
Instructions
Cut chicken into cubes, and cut sausage into 1/4 inch pieces
Mince onion, celery, and green bell pepper
Heat oil in dutch oven over a stove on medium-high heat
Cook chicken and sausage until lightly browned, 5-7 minutes
Place chicken and sausage on paper towels, and pat dry of oil
Add onion, celery, green bell pepper and creole seasoning, cook until soft, scraping the bottom of the pan to release cooked chicken bits
Add garlic and rice, cook until fragrant
Add chicken broth, diced tomatoes, chicken and sausage
Taste the broth, checking flavor, and add seasoning if desired.
Bring to a boil, stirring occasionally
Turn down heat, and simmer with lid closed for 20 minutes, stirring occasionally until rice is done
