Ingredients
2 1/2 C Flour
1 tsp Baking Soda
1 tsp Baking Powder
1 tsp Ground Cinnamon
1/2 tsp Ground Nutmeg
1/2 tsp Salt
1 1/2 C Sugar
1/2 C Butter Softened
1 C Libby's 100% Pure Pumpkin (Can of Pumpkin filling)
1 Large Egg
2 tsp Vanilla Divided
Glaze:
2 C Powdered Sugar Sifted
3 Tbsp Milk
1 Tbsp Butter softened
Instructions
1. Pre-heat oven to 350 F. Grease cookie sheets or use silicone baking sheets.
2. Combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a medium bowl - set aside.
3. Beat sugar and stick of butter in a mixing bowl until well blended.
4. Beat in pumpkin, egg, and 1 tsp vanilla until smooth.
5. Gradually beat in flour mixture.
6. Proportion dough onto baking sheet. Bake 15-18 minutes, let cool for 2 minutes.
Glaze:
Sift powdered sugar, milk, Tbsp of melted butter, and 1 tsp of vanilla until smooth. Drizzle glaze over cookies.
