Taco Stuffed Bell Peppers

Ingredients
4 Medium Green Bell Peppers Halved
1.5 lbs ground beef
1 packet taco seasoning mix
3/4 C Water
1 1/2 C Shredded Cheese
1 C Sour Cream
1/2 C Salsa
Instructions
1. Preheat oven to 350 F. Wash peppers then slice lengthwise in half through the middle and remove seeds.
2. Place in casserole dish with 1/4 C water. Cover and microwave 7 to 10 minutes or until peppers are soft. Check periodically for doneness.
3. In the meantime brown the ground beef until cooked through. When done drain the grease. Add the taco seasoning and cook according to packet instructions.
4. Stir in the sour cream, salsa, and 1 C of shredded cheese.
5. Spray a 9x13 pan with non stick spray. Place cooked peppers inside the dish and generously stuff with meat and cheese mixture.
6. Top with remaining cheese. Bake for 20-30 minutes until peppers are heated through and cheese is melted.
7. Serve with your favorite taco ingredients and a side of salsa.
