Ingredients
2 chicken breasts
1 can diced tomatoes
1 can tomato paste
4 cloves of garlic
Half an onion, diced
White Wine
3/4 cup of panko
1/2 cup flour
3/4 cup grated parmesan
2 eggs
Spaghetti noodles
Instructions
Cut the Chicken breasts in half to make them thinner. Too think, and they wont cook properly
Use a meat tenderiser to flatten the chicken breasts
Mince the garlic, and add half the garlic to a bowl with the chicken
Add a couple splashes of white wine, coat the chicken, and place in the fridge
Mince the onion, and saute in a pan with olive oil
Add the rest of the garlic to the pan, as well as tomato paste, and saute for a minute
Add the diced tomatoes, and a splash of white wine
Simmer for about 10 minutes or until sauce becomes thick
Add salt and Basil to taste
Set sauce aside
Boil some water for noodles, and add the noodles in the water
In 3 bowls, add flour to one, scramble the eggs in another, and mix the panko and parmesan in another bowl
Pull the chicken from the fridge, and salt and pepper generously
Coat the chicken in the flour, then the egg and then the panko parmesan mixture
Fry the chicken in a pan of hot oil for about 3 minutes per side
Place the chicken on a paper toweled plate to drain excess fat
Plate by adding the sauce on the side of the chicken to avoid making the breading soggy. Sauce can be placed directly on noodles
