Sweet Potato Soup

Description

Savory soup with a hint of sweetness. Perfect for Fall. Serve with a good bread to clean the bowl after!

Ingredients
2 tablespoons butter
2 medium yellow onions
1 tablespoon curry powder
1 lb carrots, peeled an cut into 1 inch pieces
1-1/2 lb sweet potatoes, peeled and cut into 1 inch pieces
8 cups chicken broth (Swansons is recommended)
1 3/4 tsp salt
Black pepper to your liking
1 apple (like Honeycrisp or Fuji), peeled and chopped up
2 tablespoons of honey

Instructions
Melt butter in a pot
Put in the onions and cook them until translucent (about 10 minutes) do not brown them.
Add the curry powder and cook a minute more.
Add the carrots, sweet potatoes, chicken broth and salt.
Bring ingredients to a boil.
Turn the heat to low, cover, and let it simmer for 25 minutes until the vegetables are very tender.
Stir in the apple and honey.
Using an immersion blender, blend the soup until smooth. Or have the soup cool off and put batches in a regular blender.
Season to taste with salt, pepper, more curry powder, or honey to taste.
Top with cheese or sour cream.
