Ingredients
1 Cup Diced Onion
4 Stalks Chopped Celery
2 Grated Carrots
1/2 Cup Butter
3 Tablespoons Flour
2 Tablespoons Curry Powder
8 Cups Chicken Broth
1 Apple, Cored and Grated. (Peelings used in the soup as well)
1/2 Cup Uncooked White Rice
2 Uncooked Chicken Breasts Cubed
2 Large Chicken Bouillon Cubes (Or just salt and pepper to taste if desired)
2 Pinches Thyme
1 Cup Warmed Heavy Cream
Instructions
Sauté onion, celery, carrot, and butter in a large pot.
Add flour, and curry, and cook another 5 minutes.
Add chicken stock, chicken, mix well, and bring to a boil. Simmer for about 1/2 hour.
Add apple, rice, bouillon, (or salt and pepper), and thyme. Simmer 15-20 minutes, or until rice is done.
Stir in the warm cream just before serving.
